Eat Green and Save some Green!

OK so it is summer, we all want to eat healthy and save some money. So why buy processed food when you can go locally and buy organic, healthy and inexpensive food....yes veggies!!

What screams of summer and its green? ZUCCHINI!!!

Here an easy, fast and delicious Lasagna: prep time is only 15 min.

2 Tbsp of Olive Olive
4 Large Zucchinis, thinly sliced(length wise)
4 Large Tomatoes, thinly sliced
2 onions
2 tbsp fresh basil
2 tbsp fresh thyme

1 cup grated cheese(if you love cheese...add a little more)

Salt and Pepper to taste

Set your Oven to 400 degrees. Spread olive oil on the bottom of a flameproof gratin dish or a shallow casserole, arrange half the Zucchini over in the bottom, then half the tomatoes and half the onions. Add the basil, thyme, salt and pepper. And Half the Cheese. Then repeat.

Bake for 30 min or until tender and cheese is melted. Place in broiler for 3 min.

So this sound delicious, its GREEN and the best news it is only 264 calories per serving!!!
